A great sauce can make any dish something to remember, and Villa de Amore’s Chicken Marsala Sauce is definitely a crowd pleaser! Our Marsala sauce is pretty easy to make, but it does take some time, and lots and lots of reduction. So, what ingredients will you need? Most important is a wide variety of wild mushrooms and classic button style. In the picture below you can see a mix of mushrooms we are using for an event this weekend, looks pretty tasty. From week to week the variety will change based on the season and availability from your local supplier. You really can’t go wrong though, and you should base your recipe on personal taste.
The other ingredients are
- Marsala wine
- Chicken stock
- Garlic
- Salt and pepper
To get started coat the bottom of a pot with two table spoons of oil and start sautéing roughly 12 ounces of mushrooms. While those are cooking add 2 tablespoons of garlic and a few pinches of salt and pepper. Once those are all nice and cooked, go ahead and add the marsala wine to the pot, about 4 cups, or until all the mushrooms are covered. Don’t be afraid to add too much, you are going to reduce it anyways. Now is the waiting part, reduce the wine close to halfway. Then add in 2 cups of chicken stock and let it continue reducing. Next add a bit of heavy cream and thicken until the sauce is a smooth velvety texture. Your done! Now add your sauce to a classic chicken marsala or try it on steak or even some fish dishes, don’t be afraid to be creative. Here is my finished product, hope yours turns out just as amazing!
